The "Clau de la Roche" selection comes exclusively from the oldest Sauvignon Blanc vines that performed particularly well this year, aged in 1 barrel and 1 sandstone amphora. The word "Clau" is used instead of "Clos" for two reasons: firstly, the word Clos is prohibited for wines outside an appellation, which a pure Sauvignon from Anjou cannot claim; and secondly, because Clos de la Roche is also a Grand Cru in Burgundy.
