Savoie Ayze Wine "Chez Edouard"

Isolated from the rest of the vineyard, "Chez Edouard" is surrounded by forests and pavilions. It is a late-ripening, high-altitude terroir, but with a south-facing exposure, which allows for thorough yet slow maturation. It is therefore always the last vineyard to be harvested.

This bush-vine vineyard is a true ampelographic treasure. It boasts a great diversity of vines, even including a few Gringet rose plants.

The winemaking process for "Chez Edouard" is similar to our other cuvées. This wine benefits from a gentle, seven-hour pressing and ferments using its indigenous yeasts. It is aged on fine lees for 9 months in a sandstone jar. The wine is bottled without fining or filtration, and then we continue the aging in bottle for 10 months. Wishing to produce digestible wines, as close to the grape as possible, but stable, we protect this wine with a very small addition of sulfur (total sulfur = 12mg/l).
