

Savoie Ayze "Etraz" Wine
"Etraz" is a dry, still white wine made from the Gringet grape variety in the Ayze appellation. This cuvée is made from the calcareous scree soils located in the locality called "Vers Etraz" in the commune of Ayse. It is the most "Jura-like" cuvée of the estate. It admirably combines liveliness and maturity. It was also from these plots on Etraz that Dominique Belluard produced his great sparkling cuvée "Mont Blanc Brut Nature".
Etraz is a wine that benefits from a gentle seven-hour pressing and ferments with its indigenous yeasts. It is aged on fine lees for 9 months in concrete eggs. The wine is bottled without fining or filtration, and then we extend the aging in bottle for 10 months. Wishing to produce digestible wines, as close as possible to the grape, but stable, we protect this wine with a very small addition of sulfite (total sulfur = 12mg/l).
