

Savoie Ayze "La Bergerie" Wine
The estate's main cuvée, "La Bergerie" is a still, completely dry white wine made from the Gringet grape variety in the Ayze appellation. As a nod to the new building into which Domaine du Gringet moved in summer 2023. It is the only blended cuvée of the estate, made from vines planted in the "Le Pré Milleret" and "Chez Reydet" lieux-dits. Substrates: yellow marl, white marl and limestone scree.
Technical details: La Bergerie is a wine that benefits from a gentle seven-hour pressing and ferments using its indigenous yeasts. It is aged on fine lees for 9 months, with 2/3 in concrete eggs and 1/3 in stainless steel tanks. The wine is bottled without fining or filtration, and then aged in bottle for an additional 10 months. Wishing to produce digestible wines and juices as close to the grape as possible, but stable, this wine is protected by a very small addition of sulfite (total sulfur = 12mg/l).
